Tepache Inspired Wild Ale with Pineapple and Cinnamon
Inspired by the spontaneously fermented Mexican beverage, Tepache. We fermented our golden sour base beer with a mixed culture of Brettanomyces and resident microflora present on the skins of pineapples. After primary fermentation was complete, we re-fermented and conditioned this beer with 400l of pressed pineapple juice, molasses sugar and whole Ceylon cinnamon.
Drink young or age, this will get weirder.
