Speyside Ex-Sherry Cask Imperial Stout.
Imperial stout fermented in a freshly emptied ex-Oloroso sherry cask last filled with Speyside whisky (Aberlour distillery). Brewed with an array of roasted and crystal malts, and fermented with a with a historical yeast, we cast the wort for this stout directly into the barrel to undergo primary fermentation.
An experimental process for us, warm fermentation in a freshly emptied barrel has proved itself a unique process to draw out intense flavours from deep within the wood. Oloroso barrels impart unique characteristics for beer aging. Their oxidative solera aging method provides a sweet nutty depth which complements notes of caramel, treacle, smoke, liquorice and dark chocolate in this robust old-school Imperial Stout.
