Golden Sour with Buckwheat Honey & Elderflower
Primary fermented with a blend of Brettanomyces strains, and brewed with local Scottish barley, wheat and oats. Honeybucket was blended from 3 different batches of beer which had an average age of around 4 months, to which we added fresh elderflower blossom foraged from the local vicinity of the brewery.
In this year’s version (2022) of Honeybucket we refermented with raw buckwheat honey supplied by our friends at the Edinburgh Honey Co. The dark rich buckwheat honey lends subtle molasses and earthy notes which combine with bright elderflower aromatics and character from the mixed culture.
Drink young, or age. This will get weirder.
