Tropical Sour with Starfruit
Primary fermented with a blend of Brettanomyces which produces huge tropical and stone fruit flavours, we refermented this base beer with an equivalent of 220g/l of starfruit (aka carambola). This south-east Asian fruit is notable for its star shaped cross section and has flavour descriptors which include pear, apple, grape and citrus. The sweet and sour balance of this fruit provides a fine complement to our most tropical house culture.
Drink young or age, this will get weirder.
